This low FODMAP coconut & lime fish soup is light, fragrant and full of flavour. Made with creamy coconut milk, fresh lime juice and tender white fish, it’s a perfect balance of richness and citrusy freshness. This easy one-pot dish is gentle on digestion while still being satisfying and delicious.

Ingredients
- 450g white fish fillets (cod, halibut or haddock)
- 1 tbsn olive oil
- 2 spring onions (green tops only), finely chopped
- 1 tbsn fresh ginger, minced
- 1 tbsn low FODMAP Thai Red Curry Paste
- 1 x 400ml tin coconut milk
- 480ml low FODMAP chicken or vegetable stock (FODMarket)
- 1 tbsn fish sauce
- Juice of 1 lime
- Salt and pepper, to taste
- Fresh coriander and sliced red chillies, for garnish
- Lime wedges, to serve
Method
Firstly prepare the fish. Remove the skin and pat the fish fillets dry with a paper towel and season with salt and pepper. Set aside for the moment.
Heat the olive oil in a large pot over medium heat. Stir in the ginger and low FODMAP Thai Red Curry Paste and cook for another minute until fragrant. Add the coconut milk and low FODMAP stock. Stir well and bring to a gentle simmer.
Carefully add the seasoned fish fillets and the green onion tops to the simmering soup. Cover and cook for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
Stir in the fish sauce and lime juice. Taste and adjust the seasoning with salt, pepper or more lime juice if needed.
Ladle the soup into bowls, garnish with fresh coriander, sliced red chillies and serve with lime wedges on the side
Tips

- For an extra boost of freshness add a handful of chopped fresh basil or Thai basil before serving
- If you like a bit of heat, sprinkle some finely chopped red chilli or a drizzle of garlic-infused oil on top
