This delicious low FODMAP Chocolate Fudge Cake is great as a treat or for a special occasion, maybe even as a Christmas dessert. It’s wheat-free so a perfect treat for those on a low FODMAP diet. The texture is delightful and guests will never know that it’s a wheat/gluten-free alternative. The recipe can be adapted to be vegan too.
Simple and quick, takes about 15 minutes prep.
Ingredients
For the cake:
- 120g of wheat free flour (see FODMarket for suitable options)
- 150g cocoa powder
- 1½ tspn baking powder
- 1 tspn vanilla essence
- 250ml maple syrup
- 350ml lactose free cow’s milk (or plant-based milk e.g.almond)
- A pinch of salt
For the chocolate icing:
- 150g cocoa powder
- 200g icing sugar
- 60g butter (or dairy free alternative)
- 1 tspn vanilla essence
- 65ml lactose free cow’s milk (or plant-based milk e.g.almond)
Method
Preheat the oven to 180C/350F/Gas 4 and prepare 2 x 20cm cake tins by greasing or lining with baking paper.
Add the wheat free flour, cocoa powder, baking powder, vanilla extract, maple syrup, salt and milk to a processor or large bowl and beat well for 1-2 minutes.
Divide the batter between the pre-prepared cake tins and bake in the preheated oven for around 25 minutes, testing with a knife. When it’s ready the knife should come clean. Allow to cool and turn out onto a cooling rack. They need to be cool before icing.
To make the icing, put the cocoa powder, icing sugar, butter, vanilla essence and milk into a processor or large bowl and mix until smooth and thick.
Assembling this delicious treat is easy. Place one of your sponge cakes onto a suitable plate. Using about ⅓ of the icing mixture, spread this evenly over the base sponge. Lay the second sponge cake ontop. Cover the cake using the remaining icing mixture. Cool in the fridge for at least one hour.

Tips
- You could add a little liqueur to the sponge mix for true indulgence
- Decorate with some sliced fruit, such as strawberries or rasberries and maybe a spig of mint
