Low FODMAP Carrot Cake

Carrot cake was always a firm favourite in our family. I’ve adapted the recipe here to make a delicious low FODMAP carrot cake recipe. It’s wheat-free and carrots are naturally low in FODMAP, so a perfect treat.

Ingredients:

  • 125g rice flour or any gluten free plain flour
  • 60g ground polenta
  • 65g ground almonds
  • 3 tsp gluten free baking powder
  • 2 tsp mixed spice
  • 350g grated carrots
  • 85g raisins (optional)
  • 215ml sunflower oil
  • 4 large free range eggs
  • 250g brown sugar
  • Topping:
  • 50g soya/plant-based spread
  • 100g icing sugar

Method:

Preheat the oven to Gas 4, 180 degrees.

Combine all the dry ingredients: flour, ground polenta, ground almonds, baking powder and mixed spice thoroughly. Then add the grated carrots and raisins and stir together until well-mixed. Whisk the oil, eggs and brown sugar until pale. Mix together the wet and dry ingredients and stir thoroughly until smooth. Pour the combined mixture into an 8 inch round baking tin and cook for 40-50 minutes. Test with a knife. When it comes out clean, it’s ready. Set it aside and cool your low FODMAP carrot cake, ready for the delicious topping. For the topping, mix the soya spread with the icing sugar to make butter icing. When the cake is cook, add the topping and share with friends.

Tips

  • Try adding a little dried fruit: cranberries or raisins maybe, for a little extra surprise (a small amount of dried fruit is allowed as part of the low FODMAP diet)
  • To add extra fibre, try adding ground flaxseeds
  • After adding the topping, try adding a few walnuts to decorate the cake
