Chicken and pumpkin skewers

These delicious low FODMAP chicken and pumpkin skewers are a great way to make use of Halloween pumpkins. It’s a shame to let the insides of those lanterns go to waste. Pumpkins are low FODMAP and will make a scrumptious autumn treat, especially when served with baked potatoes or this scrumptious wild rice salad.

Makes enough to share between four

Ingredients

  • 450g boneless, skinless chicken breasts, cut into 1-inch cubes
  • 6 tbspn pumpkins, peeled and cut into 1-inch cubes
  • 2 tbspn garlic-infused oil
  • 1 tbspn fresh/dry rosemary, finely chopped
  • 1 tbspn fresh/dry thyme, finely chopped
  • Salt and pepper to taste

You’ll need some skewers to thread your diced chicken and pumpkin.

Method

Preheat the oven or grill (or even barbecue) to a medium/high heat. In a bowl, combine the garlic-infused oil, rosemary, thyme, salt and pepper to create a marinade. Thread the chicken and pumpkin alternately onto skewers. Brush the marinade over the skewers, making sure they are evenly coated. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the pumpkin is tender. Serve the chicken and pumpkin skewers with your favourite low FODMAP dipping sauce or side dish. You can also add some rice or a simple green salad for a complete meal.
