This delicious low FODMAP Orange Cake will tickle your taste buds. It’s wheat-free so a perfect treat for those on a low FODMAP diet. The texture is delightful and guests will never know that it’s a wheat/gluten-free alternative. The recipe can be adapted to be vegan too. Try making it with lemons, as an alternative, for a great zingy taste. Simple and quick, takes about 15 minutes prep.
Ingredients
- 220g of wheat free flour (see FODMarket for suitable options)
- 150ml of vegetable oil
- 150g caster sugar
- 150ml orange juice
- Zest of 1 orange
- 2 tspns baking powder
- 3 beaten eggs (or egg substitute, such as a mashed banana)
- A pinch of salt
Method
Preheat the oven to 180C/350F/Gas 4 and prepare a loaf tin by greasing or lining with baking paper.
Whisk together the eggs (or egg substitute) and the caster sugar in a large bowl until well combined. Add the vegetable oil, orange zest and orange juice and mix well. Gradually add the wheat free flour, salt and baking powder, folding in until a smooth dough forms. Turn out the mixture into a pre-greased/lined loaf tin.
Bake for around 35 minutes, testing with a knife after about 30 minutes. When it’s ready the knife should come clean. Allow to cool and turn out onto a cooling rack.
This tangy low FODMAP orange cake can be made even more tasty by piercing with a knife and drizzling with a little more orange juice. Dust with a little icing sugar or desiccated coconut.
Tips
- For a tangy alternative try using lemons
- You could also grate some lime on the top for an extra zingy flavour
- To add extra fibre, try adding ground flaxseeds
