Low FODMAP Prawn Pad Thai

This tasty low FODMAP Prawn Pad Thai gives a perfect balance of sweet, salty, sour and spicy flavours. It’s simple to prepare and many of the ingredients you may already have in your store cupboard. This will become a firm favourite and a great addition to your low FODMAP diet.

The ingredients below should make about 2 portions, so great for sharing.

Ingredients

  • 200g rice noodles
  • 3 tbspn garlic-infused oil
  • ~12 uncooked medium or large prawns, peeled and deveined
  • ½ medium red pepper, thinly sliced
  • 1 tbspn fish sauce
  • 2 tbspn white wine vinegar
  • 1 tbspn paprika
  • 1 large egg, whisked
  • a little sugar to taste
  • 2 tspns soy sauce (or tamarind)
  • 4 spring onion leaves, sliced (green part only)
  • ~110g fresh bean sprouts
  • 3 Kaffir lime leaves
  • Lime juice

Method

Start off by soaking the rice noodles in hot water for 15 minutes until soft. Drain and set aside. (You could also use pre-cooked rice noodles and skip this step). Heat a large pan over a medium heat and add the oil and prawns and stir-fry for 3 minutes. Add the noodles, pepper slices and kaffir lime leaves. Stir-fry until noodles are translucent, for about another 4 minutes.

Add fish sauce, sugar, vinegar and paprika. Stir until well mixed. Adjust the flavour to taste with additional fish sauce, if preferred. Create a well and add the beaten egg into the well and allow to cook until the egg just starts to set, about 1 minute. Stir the cooked egg into the rest of the noodle mixture. Finally, add soy sauce, spring onion leaves and bean sprouts. Stir to mix and serve your delicious low FODMAP Pad Thai by squeezing some fresh lime juice.
