Low FODMAP Scrambled Tofu

This delicious low FODMAP Scrambled Tofu is great as a snack or main meal and perfect for those on a low FODMAP diet. It’s quick and easy, with minimal prep. It’s also vegetarian too, so what’s not to like.

Simple and quick, takes about 5 minutes prep. Serves 2

Ingredients

  • 450 grams firm tofu
  • 2 tbsp olive oil
  • 2 tbsp lactose free milk or almond milk
  • 2 tbsp nutritional yeast
  • ¼ tspn turmeric
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 2 cups baby spinach
  • 1 red pepper, diced
  • Salt and pepper to taste
  • Spring onions, green part only
  • Wheat free bread or crackers (available in local supermarkets or via FODMarket)

Method

Break the tofu into small pieces in a bowl using a fork or your hands. Heat the oil in a pan and add the red pepper, cooking until soft. Add the crumbled tofu and cook until brown. Next, add the spinach and cook for ~30 seconds until it’s wilted. The nutritional yeast and turmeric should then be added, adjusting seasoning to taste. Stir in the lactose free milk to give a creamy texture, stirring in well. Lastly, add in the chopped herbs and green spring onions, mixing in well.

Serve this delicious low FODMAP scrambled tofu on wheat free toast and enjoy!

Tips

  • Serve with wheat free pasta or rice
  • You could add an egg for extra protein
  • Try different low FODMAP vegetables such as courgette, a little celery or grated carrot for a change
  • Coriander and cumin will give a different flavour to this dish
