Low FODMAP seeded crispbread

This seeded crisp bread is full of so many nutritious ingredients and is just so handy. You can have
it with almost anything: soups, salads, dips or simply butter and a slice of cheese. Psyllium husk is a necessity for this recipe – it’s the wheat free ingredient that holds it all together. It might not be available in supermarkets, but it’s worth seeking out to make this versatile low FODMAP seeded crispbread
.

Ingredients:

  • 60g sunflower seeds
  • 30g oats
  • 60g linseeds
  • 60g sesame seeds
  • 120g pumpkin seeds
  • 2 tbsp psyllium husk (found in any health store or online)
  • 2 tbsp gluten free flour
  • 1 tspn salt
  • 500ml water
  • Sea salt for topping

Method:

Preheat the oven to Gas 3 or 160°C.
In a large bowl, mix together all ingredients (keeping the sea salt for the topping). Let it sit for 5 minutes. Line a baking tray with baking paper and spread the mixture evenly. Sprinkle with some sea salt and bake in the oven for 60-70 minutes. The bread should be crispy when ready. Let the crispbread cool and carefully remove the bread from the baking paper.
Break the bread into serving sizes, typically 6-8 slices.

Tips

  • Serve with toppings such as peanut butter and banana, Parma ham, or a little cheese
  • Try adding a little dried fruit: cranberries or raisins maybe, for a little extra surprise (a small amount of dried fruit is allowed as part of the low FODMAP diet)
  • To add extra fibre, try adding ground flaxseeds
