This delicious low FODMAP Red Thai Curry Paste is full of flavour. It shows that the low FODMAP diet does not have to be boring. The Thai Red Curry Paste recipe will make enough for 3 meals, so a great time-saver and it freezes really well too. The basic paste can be used in many other Thai dishes, such as a low FODMAP Thai Red Curry. This recipe is also suitable for vegetarians or vegans.
Makes 300g of deliciously rich, spicy paste, enough for 3 meals (for 4 people).
Freeze in meal-size portions.
Ingredients
- 1 stick celery, finely sliced
- 2 tspn ground coriander
- 1 tspn ground cumin
- 2cm piece of fresh ginger, peeled
- 5 tspn garlic replacer, optional (available via FODMarket)
- 2 lemongrass stalks, battered, bruised and roughly chopped
- 3 red chillies, thinly sliced
- ½ roasted pepper (from a jar to save time)
- 2 tbsn tomato puree
- 1 tspn black pepper
- 3 kaffir lime leaves
- ½ lime
- 50ml water
- Salt and black pepper to season
- A handful of fresh coriander, roughly chopped
Method
First toast some of the spices: cumin and ground coriander for 2 minutes in a pan on a low heat. Add these toasted spices along with the peeled ginger, celery, lemon grass, garlic replacer (if used), chillies, black pepper, roasted pepper, tomato puree and lime leaves into a blender. Squeeze in the juice from the lime and add the fresh coriander and salt with a little water and blend to a smooth paste. Add more water if needed. Your paste should be smooth with no bits. This should make around 300g of delicious paste. Freeze the paste in 100g batches to use in many Thai recipes. A low FODMAP Thai Red Curry is the most obvious, but this tasty paste can also be used to flavour many other Thai main meal dishes and soups.
