Low FODMAP Skillet Weekend Hash

This low FODMAP Skillet Weekend Hash is a hearty breakfast or snack. It’s a great way of using up leftovers or veg from the fridge. Substitute the bacon for fish or just use veg for a vegetarian option. Add your favourite herbs and a little avocado and you have a delicious low FODMAP meal.

Ingredients

  • 4 rashers of bacon
  • 2 medium-sized potatoes
  • 1 spring onion (green part only)
  • 1 egg, preferably free range
  • ½ red pepper, diced
  • Pepper and salt to taste
  • ½ tbsp olive oil or garlic infused oil
  • A few herbs (coriander, parsley or chives)
  • Optional – a small amount of avocado or parmesan cheese

Method

Peel the potatoes and cut into small cubes. Fry in a small to medium frying pan using the oil until golden brown (about 20 minutes). Cut the bacon into small pieces and add to the pan. Fry for about 10 minutes until crisp, stirring occasionally. Chop the red pepper and spring onion (green part only) and add to the pan. Season with the salt and pepper and any other herbs you fancy. Add your avocado or parmesan before serving.
Using a wooden spatula, make a well in the middle of the hash. Crack an egg into the well and fry until the white is set or until the egg is cooked to your liking.

This is a meal for one and too nice to share. So increase the amounts if you want to enjoy this delicious hearty meal with others.

Tips

  • For a healthier option, all the ingrediants can be cooked in an air fryer
  • Try leaving out the bacon and eggs for a vegetarian/vegan option
