Low FODMAP Welsh Cakes

Following the low FODMAP doesn’t mean that you have to miss out on tasty treats. These traditional low FODMAP Welsh Cakes will do just the trick with a nice cup of tea. Traditionally, these would be baked on a bakestone, but a griddle will do just as well. A little dried fruit is still compatible with the low FODMAP diet, so enjoy this guilt-free treat. They are delicious and irresistable when warm, so take a moment and enjoy the taste of Wales. 

Makes 12-16, so great for sharing with friends and family.

Ingredients

  • 250g gluten-free plain flour
  • 100g butter or plant-based spread
  • 1 egg (or egg substitute)
  • 50g sultanas or raisins
  • ½ tspn of Xanthan Gum
  • ½ tspn baking powder
  • 85g caster sugar
  • 1 tspn mixed spice
  • 1 tspn vanilla extract
  • Icing sugar to dust

Method

Whisk together egg, butter/spread, sugar, vanilla extract until all mixed well. Sift in the flour, baking powder, Xanthan Gum & mixed spice. Add sultanas/raisins. Using your hands mix all the ingredients well to form a ball of dough. If the mixture is still wet add a little extra flour or if needed a little milk if too dry. Knead the mixture lightly on a floured surface. Roll out until the mixture is roughly 7mm thick and using a medium cake cutter, cut your cakes ready for baking. Cook on a medium hot griddle either side for ~3 minutes or until golden brown. Pat them down as they raise up, ensuring that they are cooked all the way through. Allow to cool before eating. Tips

  • Try using some dried cranberries as a change (Note: having a small amount of dried fruit is still compatible with a low FODMAP diet)
  • These freeze really well and warm up nicely in the microwave
  • Great for summer picnics
